Boasting the beautifully carved oak paneling and unique tin ceiling of the haberdashery it once was in the 1930's, Shuckers Oyster Bar is one of Seattle's oldest and most pre-eminent oyster bars.  With a daily menu featuring a selection of fresh fish and seafood, Shuckers brims with several varietals and featuring local artisan microbrews.

Executive Chef Paul Shewchuk

Canadian born, Chef Shewchuk is passionate about the philosophy of farm-to-table and locally sourced ingredients. His seasonal menus and culinary offering is inspired by the Pacific Northwest’s local farmers, foragers and artisans.  His career began in Ontario, Canada at the renowned Eigensinn Farm where he gained hands on experience tending to the livestock and gardens on the farm. Since this foundation, his pedigree has taken him to iconic and innovative kitchens including Langdon Hall Country House and Spa in Ontario and Cin Cin Restaurant in Vancouver. He became part of the Fairmont team in 2010 working at Jasper Lodge in Alberta then joining the Fairmont Olympic where he became Executive Chef in March 2017.  Chef Shewchuk oversees all culinary operations throughout the hotel and heads a 45 chef kitchen.  He also cares for the hotel’s rooftop organic garden and honeybee apiary which produces hundreds of pounds of honey each year.
