From serving wild, responsibly harvested seafood to supporting organizations that champion environmental stewardship, we’re committed to protecting our oceans and ecosystems for generations to come.

Seattle is recognized as one of the most sustainable cities in the country, and as one of its oldest and most prominent oyster bars, we take pride in sourcing 100% sustainably harvested fish and shellfish. We partner with local suppliers and fishermen who use eco-conscious methods that reduce environmental impact, and we incorporate compostable packaging, recycling, and waste-reduction practices across our operations.

Located inside the Fairmont Olympic Hotel—proudly 4 Green Key certified—our sustainability efforts extend beyond the plate. From ethical sourcing and local hiring to eliminating single-use plastics, we’re constantly evolving our practices. As part of the Accor hotel group, we support a bold commitment to reduce direct emissions and energy usage by 46% by 2030, and to achieve net-zero carbon emissions by 2050.
